Roasted chicken thighs with honey chilli sauce and potatoes

What we’ll need:

  • 5 chicken upper thighs
  • 5 potatoes
  • 1 onion
  • 5 garlic cloves
  • Dried oregano
  • Bunch of fresh parsley
  • Salt and pepper
  • 30 ml oil
  • 30 g butter

Ingredients for the sauce:

  • 100 ml honey
  • 100 ml sweet chilli sauce
  • Juice of 1/2 lemon
  • 30 ml soy sauce
  • 1 tsp mustard

How to proceed:

1. Clean and wash the chicken thighs, sprinkle with salt, pepper and oregano.

2. Leave them to marinate for 10 minutes.

3. Heat the oil and butter in a pan.

4. Sear the chicken thighs on both sides over a medium heat for about four to five minutes on each side, or until they’re nicely browned.

5. Just take them out and set them aside.

6. Next, fry the chopped onions in the remaining meat fat in the same pan over a medium heat for 2 minutes, stirring all the time.

7. Now, peel five medium-sized potatoes and cut them into cubes.

8. Add the potatoes to the onions that you’ve already fried. Fry for about 10 minutes, stirring now and then.

9. Next, finely chop 5 cloves of garlic and a sprig of parsley.

10. Once the potatoes have browned, add the garlic and parsley on top.

11. Give the pan a couple of stirs and then take it off the heat.

12. Put the chicken you browned earlier on top of the potatoes.

13. Next, add 100ml of honey, 100ml of sweet chilli sauce, the juice of half a lemon, 30ml of soy sauce and a teaspoon of mustard to the pot.

14. Let the sauce simmer for about five minutes.

15. Evenly spread the sauce over the chicken and potatoes.

16. Pop the chicken in the oven, which should be preheated to 200°C, and leave it in there for 40-50 minutes.
